Roasted Cabbage Wedges

I still surprise myself with the foods that I prepare as an adult. Up until the age of 17 or so, you truly couldn’t pay me to eat cabbage (trust me, my Mom tried). I was always known among family & friends as the “picky eater,” but over the years have narrowed it down to only a few select foods that I won’t eat (basically anything pickled, fishy, or briny). My tastes have shifted radically, especially since living in Boston, and now I’m all about testing out unique ingredients.

While brainstorming ideas for March and St. Patty’s Day, I was definitely intrigued by the savory, classic dishes, and less so on things that Americans tend to brand as Irish (aka Irish coffee and shamrock shakes). Cabbage was certainly sort of a random selection for me, considering I had never prepared it before, but this dish seemed super easy and tasty…and it was!

I’ve also learned by now that butter, garlic, and lemon juice are magical ingredients to make savory meals come to life.

Ingredients:
(makes 6 wedges)

1 head of green cabbage
2 lemons
1 tablespoon of olive oil
1 teaspoon of room temp butter
1 tablespoon of minced garlic (fresh works too! I’m just lazy)
Salt & pepper to taste
Optional: fresh parsley, crumbled feta, crumbled bacon

To Make:

Preheat the oven to 425. While the oven heats, cut the ends off the cabbage.

Slice evenly in half, and then each half into thirds, giving you six wedges. Each should be roughly 1/2 inch thick. Lay the wedges onto a baking sheet.

*Note – it helps to keep the core on each wedge, rather than to cut it off. It will keep them in tact while preparing, and you can just cut around the core while eating.

Dress both sides of each wedge with a light spread of butter, olive oil, garlic, salt, pepper. Drizzle the juice 1 lemon onto the wedges.

Once the oven is heated, roast for ten minutes, then flip with a spatula. Flipping can be tricky, since the cabbage will sweat while roasting. Just to your best and let them be artfully disheveled.

While the other side cooks for ten minutes, prepare your bacon on a small pan and crumble once cooled.

After 20 minutes, your wedges should be fully cooked, with some crispy edges – it’s okay to let them burn up a little.

Plate and garnish with your cheese, bacon, parsley, and slices of your second lemon.

Parmesan Asparagus with Heirloom Tomatoes

While I’m no stranger to some ice cream and burgers on these hot summer days, I’m also a big fan of eating colorfully and fresh. This quick little veggie appetizer goes great as a side dish for a light summery dinner (maybe with some lemony grilled chicken or a lean cut of steak), or even for breakfast served up with some eggs (poached, scrambled — your call!).

You’ll need

  • 1 bundle of fresh asparagus
  • 3/4 cup fresh heirloom tomatoes (any tomatoes will do, but I just love how colorful these little beauties are)
  • 1/4 cup grated parmesan
  • 1/4 cup diced red onion
  • Drizzling of olive oil
  • 3-4 pinches of garlic salt (regular salt will do too)
  • 2-3 pinches of black pepper

To Make

01. Preheat oven to 425

02. Trim the white stalks off of your asparagus and spread out the stems onto a baking sheet

03. Dice your onion, quarter your tomatoes, and mix in with asparagus

04. Drizzle with olive oil, and season with garlic salt & pepper

05. Top with grated parmesan and pop into the oven for 12-15 minutes. I like my asparagus to have a little crunch, but if you prefer it on the softer side, simply cook it a little longer.

06. Serve up and enjoy!

We have activities on the brain, and rain just doesn’t go along with any of them. One thing, however, that we know that our weekends will certainly be full of is wonderful food. Well, it was a short week, but it sure didn’t feel like it! Reg has been tackling her move into the new place (yay!), and Christa has had a lot of exciting Connecticut Art Directors Club things going on this week and weekend. We’re just excited for a couple days off from work to tackle house projects, hang with friends and take it easy.

Btw- how was everyones Memorial Day?? This was one of the first years we both didn’t attend any sort of big bash or BBQ, but as you might have been able to catch — we’re crazy busy, so we didn’t mind!

Man, the last couple of months have done a number on me. Back in the beginning of April, my landlord of 4 years told my 3 roommates and I that she had decided to put our home on the market. She needed to do it for personal reasons, and while we totally understood and wanted to help her, it was a lot of information to take on very quickly. We live in a big 5 bedroom house with an attic, basement, and storage galore. Needless to say we had some stuff accumulate over time.

She needed us out as quickly as possible, and almost immediately began to have open houses. After a couple of weeks of very intensive searching for a new place, we found a really nice space only a quarter mile away from where we already live. Right after we signed on and had accepted the change, our landlord decided to take the house off of the market. We had the option to stay, but after weighing out the pros and cons, decided that the move made the most sense for us. We’re downsizing for sure, but I’m actually a little excited about that. Our current place is almost too big — so many things accumulating in the nooks and crannies! Also, the new place has central air, can I get an amen to no more sweaty Boston summer sleepless nights?

The big move is happening this coming weekend, and while I’m sad to give up such a beautiful place that was my first home in a new city, I’m ready to make the new place ours.

Five Ways to Make Your New Place Feel Like Home

As we’ve been mentioning, Christa and Curtis just moved into a new place, and Reg and her roomies will be relocating at the beginning of June. There are some seriously exciting and NOT exciting parts of moving, but the biggest challenge will be making your new place feel like home. To help, we’ve gathered some tips that will definitely be useful in our nesting process.

 

01. Get cookin’

Before we get started here — how good does this look?? This will be made on our end in the very near future (find the link below!). Ok now, back to business.

One thing that’s sure to make your place feel like your own is to get that kitchen fired up. It may be the furthest thing from your mind when your stuff is all a jumble, but eating take-out for two weeks straight is not going to help your well-being, or your wallet. Once you’re done with your move, start unpacking that kitchen pronto. You don’t have to make beef burgundy or anything, just a simple 20-minute-meal will do. It’ll help you get a sense of the new storage, so you can make things more efficient over time. You can also get a sense of what your new place is missing, so you can get a list going of what to pick up next time you’re home shopping.

 

02. Figuring out the right fit for your furniture

When Curtis and I moved into our new place we couldn’t wait to see all of our beloved furniture in the open space – we wanted to change the positioning and order of our living room, try new pictures on the wall, reinvent our rooms. And what happened was just that. BUT not exactly on our terms. Our living room is oddly shaped, and we can’t use most of the furniture we originally had in there. At first I was bummed and was trying really hard to fit these pieces in, but now I’ve accepted that those items have to live somewhere else. In our case that doesn’t mean we have to get rid of it (we have other rooms to transfer them to), but in some cases, letting go of the items might be the right thing to do.

If you’re planning on staying somewhere for a while, and a piece of furniture you love doesn’t have a home in your new space but you couldn’t possibly give it away, see if someone you love can make use of it, or rent a storage unit — but think hard on these pieces and try to let go if they’re not right for your new home. Think of the joy someone at goodwill (or on craigslist) will have when they stumble upon your awesome piece.

 

03. Find all items a real home

While this photo above is beautiful and those paintings are clearly living there, if that isn’t your style and you’re just propping them up until you find the time, or the energy, or the man-power to put them up, find whatever you need and get the deed done. Your place will feel like a real home once you arrange your favorite pieces exactly where you want them! And even if you put it in a spot and then change your mind, that’s ok – how would you know it’s not the right place until you try? Get the boxes out of the way, find homes for those random piles you’ve got laying around, and start gettin’ things organized!

 

04. Freshen up

Let’s be real, there’s nothing grosser than a former tenant’s dust and crumbs. This past week Reg and her roommates were doing a sweep of their new place before they officially move in so they can see what needs to be done beforehand. They opened the fridge, kitchen cabinets, etc… and let’s just say it wasn’t pretty. One major way to make your place feel like your own is to give that bad boy a good scrubbing. If your landlord lets you, try to get in a day or two early to throw some elbow grease into it. Clean the baseboards, windows (and their sills!), bathtub, toilet, the works. Hardwood floors? Polish them! Carpet? Rent a carpet cleaner! This will make things feel so much nicer once you start to bring all of your furniture in.

Once you’re settled, keep the momentum going! Get some potted herbs for your kitchen window, hang some plants in the living room, and put some flowers in the entry way. One of our favorite tricks is to simmer some citrus peels and spices over the stovetop. It’ll make your place smell so fresh. *A nice springy option is lemon rinds and rosemary.

 

05. Start exploring your new neighborhood & community

While this chunk of advice doesn’t have anything to do with decorating (boo), it is an important part of a move. Start exploring your new neighborhood, take walks around the block, find a new jogging route – once you’ve become more familiar with your new area, you’ll start to feel at home in your new place. If you move into an apartment building, start paying attention to familiar faces, or if you’ve moved into a split family house, chat with your neighbor whenever you both have a minute. The more comfortable you are in your new zone, the sooner your new apartment or house will feel like home!

Watermelon & Feta Salad

Oh August, we hardly knew thee. It seems like summer came and went, but since I’m not quite emotionally prepared to jump on the pumpkin spice latte band wagon, I’ve decided to share with you how my stomach has decided to resist the season change.

We had a gargantuan melon sitting on our kitchen table for a while — half of it came to Newport with us last weekend, but that only did so much damage. The other half was lingering in our fridge, just begging to become something unusual. Since I’m a freak for sweet and savory, and had never made a melon salad before, this guy hit all the right notes for me.

Ingredients:
(makes one large salad, or two small)

For the salad:

1 cup largely diced watermelon
2 heaping handfuls of kale, stems removed
1/4 cup almonds
1 large chicken breast
1/4 cup crumbled feta

For chicken marinate:

1 tsp thyme
2 tsp olive oil
1/2 tsp garlic powder
2 tsp lemon juice
salt & pepper

For dressing:
(I’ll be honest, I just sort of eyeballed this part)

1/4 cup olive oil
1 tbsp lemon juice
1/2 tsp fresh or minced garlic
1 tbsp apple cider vinegar
salt & pepper

To Make:

01. Mix marinate ingredients well in a small bowl. Mix on chicken thoroughly and allow to sit for at least 10 minutes.

02. For dressing, place your olive oil in a small skillet with your garlic. Warm slightly just to infuse the oil. Then in small bowl, mix with the other dressing ingredients and set aside.

03. Give your de-stemmed kale a rough chop and put in a large mixing bowl with the rest of the salad ingredients (besides your chicken and dressing)

04. Put your skillet on medium-low heat and coat lightly with cooking oil. Cook your chicken until just cooked through and golden on each side. Allow to cool slightly and give it a rough chop (I like my chicken to be small little chunks in my salads).

05. Place chicken and dressing in your large with with the salad mixture and toss thoroughly.

And that’s it! I found this pairs really nicely with a crisp sauvignon blanc or pinot grigio.

A couple of tips:

* I’ve heard this goes very well with a little fresh mint mixed in. If you try let me know how it goes!

* There’s also a lot of hype these days about “massaging your kale.” Since kale is a pretty tough green, giving it nice little rub down with your hands and some olive oil for a few minutes goes a long way!

Good Ol’ Blueberry Pancakes

While we have a few weeks of summer left, take full advantage of your summer fruits and lazy weekends! Blueberry pancakes are where it’s at. When Reg and I were in New Hampshire a few weekends ago, we woke up early to pick some fresh blueberries and had pancakes on the mind – it was quick, easy and delicious. This recipe has the perfect amount of fluff, while maintaing a little density.

// Ingredients {makes between 8-10 pancakes}

Nonstick Spray (or butter for the pan)
1 1/4 cups all-purpose flour
1 egg
1 1/4 cups buttermilk (if you don’t have buttermilk, this is how to make it easily at home)
1/4 cup granulated sugar
1 heaping tablespoon baking powder
1 teaspoon baking soda
1/4 cup cooking oil
pinch of salt
blueberries (or any fruit you’d like!)

// Instructions

01. Preheat a skillet over medium-low heat. Use nonstick spray or butter to grease up the pan.

* At this point if you’re making the buttermilk, do so now so it has a few minutes to sit.

02. Mix flour, sugar, baking soda, baking powder & salt into a medium sized bowl.

03. In a large bowl, whisk your milk, oil, and egg together.

04. Add dry ingredients slowly to the wet, whisking until well mixed and there are no chunks.

05. Pour your desired sized pancake into the skillet

06. Sprinkle in your desired fruit (as many as you’d like!)

07. Flip when edges are bubbling/appearing to harden. They should be golden brown.

08. Cook until the pancakes seem cooked all the way through and the bottom is golden, about another 2-3 minutes.

09. Repeat!

Garnish with powdered sugar and extra fruit if you’d like! It makes them extra cute!
