It’s the Friday of a long weekend, what is better than that?! Luckily this week flew by and we’re in for some chill time. Reg will have a new household arrangement this weekend with a new roomie moving in and an old roomie moving out – ah life changes! And Christa will be up at the Farm helping with some spring cleaning (closets here I come!) and hopefully taking a dip in the pond if it actually ends up being 93 degrees – eek! Doing anything fun for Memorial Day?

Can we just talk about this delicious looking truck for a second?! We don’t know if we’ve ever seen an automobile look so damn fine. Carb City, and we want in on that.

ANYWAYS, back to real life. We’re here with our Friday links (sorry for the radio silence last Friday, life can be so hectic sometimes!) Christa was in Colorado with Curtis visiting her brother from last Thursday-Tuesday (you may have seen some instagram pictures here & here), and this week has just been insane! I think the full moon week crazy-vibes came a week early…

But is everyone amped for the weekend? We’ll be spending it in Hartford together, shooting our first official contribution post for CT Eats Out! Can’t wait to team up with these guys and share with you all what we come up with. We’ll be doing a monthly post for them, so stay tuned!

Hey dolls — whatchya all up to this weekend? My house is gonna be a little on the quiet side this weekend, with one of my roommates out of town. I also have my first big hair chop in years coming up tomorrow. I’m freakin’ out a little, but looking forward to a fresh change. I’m also hoping to get in a thorough apartment clean AND a d.i.y. — this is probably all far too ambitious for two days, but we’ll see how it goes! Christa will be bouncing all around as well, with a friend’s birthday bonfire celebration, checking out Hartford’s Open Studios, and a swanky new cocktail bar that opened up, Little River Restoratives.

Happy Friday, loves. How has everyone’s week been? Has your personal clock settled into daylight savings yet? While I really don’t look forward to the darker evenings, I will admit that waking up to a brighter morning has been nice. I’ve been rising before my alarm on most mornings, which is so much more pleasant than the sound of an alarm. It also helps me to get a little more done earlier in the day on the weekends. I’m going to try to get to a morning spin class tomorrow. Considering I much prefer working out in the evenings, we’ll see how that goes! Hope you all have a beautiful weekend ahead of you. Parmesan Asparagus with Heirloom Tomatoes

While I’m no stranger to some ice cream and burgers on these hot summer days, I’m also a big fan of eating colorfully and fresh. This quick little veggie appetizer goes great as a side dish for a light summery dinner (maybe with some lemony grilled chicken or a lean cut of steak), or even for breakfast served up with some eggs (poached, scrambled — your call!).

You’ll need

  • 1 bundle of fresh asparagus
  • 3/4 cup fresh heirloom tomatoes (any tomatoes will do, but I just love how colorful these little beauties are)
  • 1/4 cup grated parmesan
  • 1/4 cup diced red onion
  • Drizzling of olive oil
  • 3-4 pinches of garlic salt (regular salt will do too)
  • 2-3 pinches of black pepper

To Make

01. Preheat oven to 425

02. Trim the white stalks off of your asparagus and spread out the stems onto a baking sheet

03. Dice your onion, quarter your tomatoes, and mix in with asparagus

04. Drizzle with olive oil, and season with garlic salt & pepper

05. Top with grated parmesan and pop into the oven for 12-15 minutes. I like my asparagus to have a little crunch, but if you prefer it on the softer side, simply cook it a little longer.

06. Serve up and enjoy!

Hey all, and happy almost summer! We’re just two short days (well, long days, according to the Earth’s rotation), away from one of our favorite seasons. And what better way to kick it off but with a day where you get to show your Dad a little extra appreciation?? This weekend is full of all sorts of goodness, hope you enjoy it!

Watermelon & Feta Salad

Oh August, we hardly knew thee. It seems like summer came and went, but since I’m not quite emotionally prepared to jump on the pumpkin spice latte band wagon, I’ve decided to share with you how my stomach has decided to resist the season change.

We had a gargantuan melon sitting on our kitchen table for a while — half of it came to Newport with us last weekend, but that only did so much damage. The other half was lingering in our fridge, just begging to become something unusual. Since I’m a freak for sweet and savory, and had never made a melon salad before, this guy hit all the right notes for me.

Ingredients:
(makes one large salad, or two small)

For the salad:

1 cup largely diced watermelon
2 heaping handfuls of kale, stems removed
1/4 cup almonds
1 large chicken breast
1/4 cup crumbled feta

For chicken marinate:

1 tsp thyme
2 tsp olive oil
1/2 tsp garlic powder
2 tsp lemon juice
salt & pepper

For dressing:
(I’ll be honest, I just sort of eyeballed this part)

1/4 cup olive oil
1 tbsp lemon juice
1/2 tsp fresh or minced garlic
1 tbsp apple cider vinegar
salt & pepper

To Make:

01. Mix marinate ingredients well in a small bowl. Mix on chicken thoroughly and allow to sit for at least 10 minutes.

02. For dressing, place your olive oil in a small skillet with your garlic. Warm slightly just to infuse the oil. Then in small bowl, mix with the other dressing ingredients and set aside.

03. Give your de-stemmed kale a rough chop and put in a large mixing bowl with the rest of the salad ingredients (besides your chicken and dressing)

04. Put your skillet on medium-low heat and coat lightly with cooking oil. Cook your chicken until just cooked through and golden on each side. Allow to cool slightly and give it a rough chop (I like my chicken to be small little chunks in my salads).

05. Place chicken and dressing in your large with with the salad mixture and toss thoroughly.

And that’s it! I found this pairs really nicely with a crisp sauvignon blanc or pinot grigio.

A couple of tips:

* I’ve heard this goes very well with a little fresh mint mixed in. If you try let me know how it goes!

* There’s also a lot of hype these days about “massaging your kale.” Since kale is a pretty tough green, giving it nice little rub down with your hands and some olive oil for a few minutes goes a long way!

Soon we’ll be at the beach for a nice long weekend, and while we want to be in the sun as much as possible, we know it’s not good for us — so of course big summer beach hats crossed our minds. It feels like the perfect beachy, boho, surfer girl combo to us, and we hope we can find some cute ones asap to look as pinterest-worthy as these ladies!

When it comes to mixing & matching on the beach, we’re big fans — and we’re also okay with things getting a little weird. If you wanna play with spots and stripes, you go on with your bad self. The trick with pattern/print play is all about making sure the colors compliment each other, as well as the print proportions. If you’re feeling a little less adventurous, it’s always a safe bet to have a solid bottom and saucy top. This is an awesome way to make your beach-wear stand out, and having a new suit that’s totally custom to your style.
