Hello, dearies — hope you all had a lovely week, and have an even lovelier couple of days ahead of you. We’re stunned that next week is Thanksgiving. How did that happen??? It feels like as we get older, time goes by so much quicker. Are any of you all feeling similarly?

This past week our small home town in CT experienced some devastating news about a young mother, a member of our graduating class, who suddenly passed. In combination of learning this, of the troubling news in Paris, as well as world-wide current events  — it’s definitely resulting in some self-reflection. This week we’re feeling especially grateful for our friends, family, and the wonderful community that we were raised in.

While we have mushy hearts this week, we also still have our care-free nature about us. We’ve rounded up our weekly links for you all, hope you enjoy, and we’ll see you on Monday 🙂

Moms can be a little tough to buy for, because anything they want/need tends to be a new kitchen appliance or cashmere, which can definitely burn a hole in your wallet. While we REALLY wish we could buy it for them, more often than not we just can’t quite tackle it on your own. Happy Cinco de Mayo!

Hola! Hope you all had fantastico weekends! So if you’re anything like me, you’re currently planning last minute ways to celebrate Cinco de Mayo at home (because you forgot about it). Since I won’t be throwing a party or anything wild like that, I decided to look up some quick dishes to throw together while my roommates and I watch some more Gossip Girl (our Roku is a very dangerous device).

01. Cucumber Margaritas

Ingredients for one serving:

// 1 shot (1.5 to 2 oz.) tequila

// 1 shot (1.5 to 2 oz.) triple sec

// 1 shot lime juice

// 2 shots cucumber juice (if you don’t have a juicer, here’s a how-to)

// splash of agave

// salt or sugar on rim, plus lime wedge for garnish

To make:

Pour all ingredients (except for garnish) into a shaker over ice. Shake well. Dampen glass rim and spin in a plate of sugar or salt. Add lime wedge and enjoy!

 

02. Chicken & Veggie Quesadillas

Ingredients for one serving:

// 1 chicken breast

// 1 teaspoon fajita seasoning

// 2 teaspoons olive oil

// 1 large or 2 small flour tortillas

// 1/4 cup of assorted choice of diced veggies – I like to do zucchini, tomato, and scallion

// 1/2 cup shredded mexican blend cheeses

// side choices – sour cream or mashed avocado with lime

To make:

Marinate chicken in olive oil and fajita seasoning for at least ten minutes. Cook on medium-low skillet for about 5 minutes on each side, until the thickest part has no pink.

Set chicken aside. While it cools, prep your veggies. Once chicken has cooled, shred it with your hands or two forks and set aside again.

Heat skillet on low and spray (or drizzle lightly) with oil. Place one tortilla down on skillet. Fill with cheese, veggies, and chicken. Place second tortilla on top while it heats (or, if using one large tortilla, fold in half). Once bottom side browns, flip to other side. Once cooked, allow to slightly cool, then cut and serve with choice of sides.

 

03. Un-fried Ice Cream

Mexican-Unfried-Ice-Cream

Ingredients for four servings:

// 2 cups fat-free vanilla frozen yogurt

// 2 cups Special K Cereal, crushed

// 2 tsp ground cinnamon

// 4 tsp chocolate syrup

// cherry and whipped cream for topping (optional)

To make:

In a shallow bowl, mix cereal and cinnamon. With an ice-cream scooper, scoop your froyo and place in the cereal mix. Roll in the mix, and pack the ball firmly (easiest if wearing rubber gloves). Place in a serving bowl, drizzle with syrup and garnish with whipped cream and cherry. Then eat up!

Now get out there and enjoy your fifth of May!

Happy Monday everyone! We hope you had a great weekend and are getting prepped for Valentine’s Day on Friday! We’ll be giving you all sorts of posts themed for Vday, so stay tuned. Today we have some downloadable cards for you! As we mentioned before, we’re big diy-ers when it comes to cards (whether they’re crafty or computery). We stuck with the mod look, simple and chic, and hope you and your card receivers enjoy them as much as we do! They’re about post card size, so send em out, use them as gift toppers or present them like normal cards- so many possibilities!

* Be aware that some home printers might not print out quite as bright, so play around with paper type and ink. And if it’s not coming out quite as nice as you’ve hoped and you’re looking for something more saturated, I had mine printed at Staples on white card stock for a very low cost!
