Happy Cinco de Mayo!

Hola! Hope you all had fantastico weekends! So if you’re anything like me, you’re currently planning last minute ways to celebrate Cinco de Mayo at home (because you forgot about it). Since I won’t be throwing a party or anything wild like that, I decided to look up some quick dishes to throw together while my roommates and I watch some more Gossip Girl (our Roku is a very dangerous device).

01. Cucumber Margaritas

Ingredients for one serving:

// 1 shot (1.5 to 2 oz.) tequila

// 1 shot (1.5 to 2 oz.) triple sec

// 1 shot lime juice

// 2 shots cucumber juice (if you don’t have a juicer, here’s a how-to)

// splash of agave

// salt or sugar on rim, plus lime wedge for garnish

To make:

Pour all ingredients (except for garnish) into a shaker over ice. Shake well. Dampen glass rim and spin in a plate of sugar or salt. Add lime wedge and enjoy!

 

02. Chicken & Veggie Quesadillas

Ingredients for one serving:

// 1 chicken breast

// 1 teaspoon fajita seasoning

// 2 teaspoons olive oil

// 1 large or 2 small flour tortillas

// 1/4 cup of assorted choice of diced veggies – I like to do zucchini, tomato, and scallion

// 1/2 cup shredded mexican blend cheeses

// side choices – sour cream or mashed avocado with lime

To make:

Marinate chicken in olive oil and fajita seasoning for at least ten minutes. Cook on medium-low skillet for about 5 minutes on each side, until the thickest part has no pink.

Set chicken aside. While it cools, prep your veggies. Once chicken has cooled, shred it with your hands or two forks and set aside again.

Heat skillet on low and spray (or drizzle lightly) with oil. Place one tortilla down on skillet. Fill with cheese, veggies, and chicken. Place second tortilla on top while it heats (or, if using one large tortilla, fold in half). Once bottom side browns, flip to other side. Once cooked, allow to slightly cool, then cut and serve with choice of sides.

 

03. Un-fried Ice Cream

Mexican-Unfried-Ice-Cream

Ingredients for four servings:

// 2 cups fat-free vanilla frozen yogurt

// 2 cups Special K Cereal, crushed

// 2 tsp ground cinnamon

// 4 tsp chocolate syrup

// cherry and whipped cream for topping (optional)

To make:

In a shallow bowl, mix cereal and cinnamon. With an ice-cream scooper, scoop your froyo and place in the cereal mix. Roll in the mix, and pack the ball firmly (easiest if wearing rubber gloves). Place in a serving bowl, drizzle with syrup and garnish with whipped cream and cherry. Then eat up!

Oatmeal Raspberry Crumble Bars

raspberry bar 6 copyLately I’ve been on a bit of a health kick by trying to eat a little better and exercise at least a couple of days a week. However, most days I find myself needing a little sweet treat to keep me satisfied so my brain doesn’t go haywire and binge at midnight. Usually I’ll start my morning off with some plain Greek yogurt and blueberries, or a veggie scramble with toast, but I love to have a baked companion for my coffee. This weekend I decided to prep a little something to bring to work – it’s a little sweet, and a lot crumbly.raspberry bar 1 raspberry bar 3 raspberry bar 2 raspberry bar 4 raspberry bar 5

// Ingredients:

– 1/2 cup dark brown sugar, packed

– 1 cup flour

– 1/4 teaspoon baking soda

– 1/8 teaspoon of salt

– 1/2 teaspoon cinnamon

– 1/4 teaspoon nutmeg

– 1 cup rolled oats

– 1 stick (aka 1/2 cup) of butter, softened

– 1 cup raspberry jam, seeded or seedless

// To make:

01. Preheat oven to 350 degrees and grease an 8×8 baking tin.

02. Combine sugar, flour, baking soda, salt, cinnamon, nutmeg, and oats in a medium bowl. With hands or a pastry blender, combine dry ingredients with the butter until you’ve formed a crumbly mixture.

03. Scoop 2 cups of the mixture onto the baking sheet, and press firmly with the back of a wooden spoon or your knuckles to create the bottom crust. Be sure to press the edges well.

04. Spread the jam on top of the crust, leaving a 1/4 inch border around the edges (this will prevent them from browning too much).

05. Scoop the rest of the crumble on top, lightly pressing down.

06. Bake for 35-40 minutes until golden.

07. Allow to cool, then eat up!
