🙌 Yes, please! What a perfect little treat on a hot & humid day! As you’ll see below, things are pretty self explanatory in the homemade ice cream sandwich world – 2 cookies of your choice, ice cream of your choice, and toppings of your choice. We went with chocolate chip cookies with fruity pebbles, froot loops and traditional sprinkles.

Our only tips are:

+ work fast, the ice cream will start to melt stat.
+ if you’re planning on serving these, make them and freeze for a couple hours so everything can set. This will especially help when biting into a hard cookie with soft ice cream……
+ go wild with your flavor combinations and toppings – the options are endless!

These summer months just fly by don’t they?! We’re pretty excited about August because we’ll be meeting up with our closest friends for our annual Old Lyme long weekend away (last seen here & here).

August to us is fun, quirky, and full of ice cream, tacos and cocktails, hehe. Our moodboard is full of bold, bright statement images and we’re trying to live similarly – bold & bright 😉

So, it’s August? Where did that come from? This month has been known to bring us a bit of sorrow in the past, as we suddenly realize that summer is already halfway through. But yuh know what? All proceeds go to UNRWA’s (United Nations Relief and Works Agency for Palestinian Refugees in the Near East) Gaza Emergency Appeal. Tomorrow is the OFFICIAL first day of summer friends, how exciting is that! We’ve been experiencing the heat already, but it will feel good to bump it up into summer full time (aka more beach and BBQs). This weekend’s weather looks promising, so before you head out to enjoy it, make sure to check out our Friday links!

cct // Speaking of summer, I guess that means it’s officially bikini season, ugh. I definitely need to fit in some cardio, but I can get down with these exercises for now.

rkv // Eek! I have 23 days until my first 10k ever, and I’m freakin’ a bit. I’m a bit behind on my training, but found these race do’s and don’ts refreshing!

cct // My boss made these amazing sounding cupcakes and I need to try them asap!

rkv // Lately I’ve been loving myself some green goddess dressing— it adds just the right amount of flavor to a dish, while being low in fat (the bad kind, that is). This recipe looks super scrumptious!

cct // We had a photo shoot yesterday (for the new Hartford Prints! website) with Victoria Gloria Photography, and here is a sneak peek – such gorgeous shots! (don’t mind my odd hip pop in the first pic, I don’t think I’m usually that wide??)

Cheering Up

It’s only Wednesday and it’s already been one of those weeks…so we’re trying to cheer up and be inspired with some beautiful pictures! Thank goodness for pinterest and the ability to come across thousands of images that really do make you feel better.

And of course it’s a gloomy day today (womp womp), but even if you’re not feeling blue, hopefully these images will help brighten up your day in other ways!

Happy Cinco de Mayo!

Hola! Hope you all had fantastico weekends! So if you’re anything like me, you’re currently planning last minute ways to celebrate Cinco de Mayo at home (because you forgot about it). Since I won’t be throwing a party or anything wild like that, I decided to look up some quick dishes to throw together while my roommates and I watch some more Gossip Girl (our Roku is a very dangerous device).

01. Cucumber Margaritas

Ingredients for one serving:

// 1 shot (1.5 to 2 oz.) tequila

// 1 shot (1.5 to 2 oz.) triple sec

// 1 shot lime juice

// 2 shots cucumber juice (if you don’t have a juicer, here’s a how-to)

// splash of agave

// salt or sugar on rim, plus lime wedge for garnish

To make:

Pour all ingredients (except for garnish) into a shaker over ice. Shake well. Dampen glass rim and spin in a plate of sugar or salt. Add lime wedge and enjoy!

 

02. Chicken & Veggie Quesadillas

Ingredients for one serving:

// 1 chicken breast

// 1 teaspoon fajita seasoning

// 2 teaspoons olive oil

// 1 large or 2 small flour tortillas

// 1/4 cup of assorted choice of diced veggies – I like to do zucchini, tomato, and scallion

// 1/2 cup shredded mexican blend cheeses

// side choices – sour cream or mashed avocado with lime

To make:

Marinate chicken in olive oil and fajita seasoning for at least ten minutes. Cook on medium-low skillet for about 5 minutes on each side, until the thickest part has no pink.

Set chicken aside. While it cools, prep your veggies. Once chicken has cooled, shred it with your hands or two forks and set aside again.

Heat skillet on low and spray (or drizzle lightly) with oil. Place one tortilla down on skillet. Fill with cheese, veggies, and chicken. Place second tortilla on top while it heats (or, if using one large tortilla, fold in half). Once bottom side browns, flip to other side. Once cooked, allow to slightly cool, then cut and serve with choice of sides.

 

03. Un-fried Ice Cream

Mexican-Unfried-Ice-Cream

Ingredients for four servings:

// 2 cups fat-free vanilla frozen yogurt

// 2 cups Special K Cereal, crushed

// 2 tsp ground cinnamon

// 4 tsp chocolate syrup

// cherry and whipped cream for topping (optional)

To make:

In a shallow bowl, mix cereal and cinnamon. With an ice-cream scooper, scoop your froyo and place in the cereal mix. Roll in the mix, and pack the ball firmly (easiest if wearing rubber gloves). Place in a serving bowl, drizzle with syrup and garnish with whipped cream and cherry. Then eat up!

Now get out there and enjoy your fifth of May!
