Ice Cream Cookie Sandwiches

🙌 Yes, please! What a perfect little treat on a hot & humid day! As you’ll see below, things are pretty self explanatory in the homemade ice cream sandwich world – 2 cookies of your choice, ice cream of your choice, and toppings of your choice. We went with chocolate chip cookies with fruity pebbles, froot loops and traditional sprinkles.

Our only tips are:

+ work fast, the ice cream will start to melt stat.
+ if you’re planning on serving these, make them and freeze for a couple hours so everything can set. This will especially help when biting into a hard cookie with soft ice cream……
+ go wild with your flavor combinations and toppings – the options are endless!

These summer months just fly by don’t they?! We’re pretty excited about August because we’ll be meeting up with our closest friends for our annual Old Lyme long weekend away (last seen here & here).

August to us is fun, quirky, and full of ice cream, tacos and cocktails, hehe. Our moodboard is full of bold, bright statement images and we’re trying to live similarly – bold & bright 😉

With all of this warm weather and sunny days, we can’t help but dream about having our feet in the sand while we sit in our cubes. So we’re sort of having mixed feelings right now about the upcoming change of the seasons. Here in New England, it’s been one of the hottest/sunniest weeks all summer, but the fact that it’s September is throwing us for a loop. We want to dress for fall, yet our attire needs to be able to handle these 94 degree days. We’ve realized that the best way around this is through our color choices and textures. Burgundy, black, and leather all scream fall, but the flowy silhouette and high-hems keep it summer-time cool.

Homemade Lemonade with Maple Syrup

You may have made traditional lemonade before, but this batch has something a little different – maple syrup instead of sugar! It’s the Flatbread style, and it’s become our style. Back in the day when Regina, Curtis and I all worked at Flatbread, having a server make you a lemonade was a glorious thing! It has since been a fun treat to make at home and we’re excited for you guys to give it a try!

Ingredients
Lemons
Maple Syrup
Ice Cubes
Water

…Easy, right!

Your preference of sweet or tart lemonade will guide your lemon juice, maple syrup and water ratios. I’ve only ever seen or personally made this mixture one drink at a time, so grab about 2-4 lemons per cup, your jar of maple syrup and a pitcher of water – then get to mixin!

Directions
Cut and squeeze the juice of 2-4 lemons into glass. Pour in desired maple syrup (enough to coat the bottom is usually a good start). Next add water and stir! At this point you can add more maple syrup or lemon juice to even out your drink to your liking.

Sweet Summer Sangria

In case you haven’t noticed, we’re BIG fans of Fridays around these parts, and we’re pretty shameless in our celebrations of them. We decided to show our appreciation for them with this festive summery treat we made a couple of weekends back while we were hanging at the beach.

Before we go any further — how ridiculously adorable/hilarious are they straws??? We happened upon them hiding in the cabinets at our friend’s house, and it was fate.

Alright, moving on. This recipe is very simple, but is best if made early in the day so that the wine has time to infuse with the fruit juices.

Ingredients

1 bottle of mid-grade sauvignon blanc
1 cup pineapple
3/4 cup canned peaches (you can also use fresh, but we opted for canned so we could use the syrup in them)
3/4 cup strawberries
Splash of club soda to top with

Optional:
Instead of club soda, you can use a splash Fresca, 7Up, or any fruity regular soda. Just don’t use too much, or you’ll go into sugary overdrive.

To make

01. Pour your wine into a pitcher or jug

02. Chop up your pineapple and peaches and place into your wine, and give it a good stir. You don’t want to add your strawberries at this phase — they’ll lose there color and look anemic and sad — we learned the hard way!

03. Place in the fridge for a couple of hours so everything can infuse

04. To serve — stir well, pour into your glass until about 3/4 full, slice your strawberries and add in. Top with club soda (or regular soda), and say cheers!

Ohhhh my goodness, this week has been insane! Not only has work been a  hot mess, but yesterday I went across the street to the laundry mat and realized it was closed. PERMANENTLY. I mean come on man, what is that? Considering I live in a city with no car, I was pretty distraught, I’m not gonna lie. But you know what made me feel better? The glimmer of light at the end of the tunnel — I get to have a long weekend at a beach house with Christa and friends! And you know what goes well with lounging on the beach? REGGAE MUSIC.
